Preheat your oven to 400°F (200°C). Meanwhile, peel the 4 medium-sized pears using a vegetable peeler, then cut off the ends and slice the pears in half. Gently scoop out the core from each pear half, taking care not to break the fruit. Place the peeled and cored pear halves face down on a baking sheet or in a 9x13-inch glass baking dish.
In a small microwave-safe bowl, combine 3 tablespoons honey, 2 tablespoons coconut oil or unsalted butter, 1/2 teaspoon ground cinnamon, and 1/2 teaspoon pure vanilla extract. Microwave the mixture for about 30 seconds until the coconut oil or butter is melted. Stir thoroughly to ensure all the ingredients are well blended. Personally, I always take a moment to taste the sauce at this stage—sometimes I add a touch more cinnamon if I want extra warmth in the flavor.
Spoon about half to three-quarters of the honey-cinnamon sauce from Step 2 over the prepared pears, making sure each half is coated evenly. Transfer the baking dish to the preheated oven and bake for approximately 30 minutes, or until the pears are soft and turning golden brown.
Remove the baked pears from the oven and allow them to rest for about 5 minutes. Before serving, spoon the remaining honey-cinnamon sauce from Step 2 over each pear for extra flavor and shine. Enjoy!
