Ingredients
  

For the base:

  • 1 flatbread or pizza crust (store-bought is fine)

For the topping:

  • 1 tbsp honey
  • 1 tbsp olive oil (extra virgin preferred)
  • black pepper (freshly ground)
  • 4 oz brie cheese (room temperature)
  • 1 tbsp balsamic glaze
  • salt
  • 1 tbsp fresh thyme leaves
  • 1/2 cup cranberries (fresh or dried)

Instructions
 

  • Preheat your oven to 400°F (200°C). Place the flatbread or pizza crust on a baking sheet and set aside to prepare the toppings.
  • In a small bowl, toss the cranberries with olive oil, a pinch of salt, and freshly ground black pepper until evenly coated. This helps the cranberries roast nicely and adds seasoning.
  • Evenly spread the seasoned cranberries from Step 2 over the flatbread. Arrange slices of brie cheese on top, then drizzle with honey for added sweetness.
  • Bake the assembled flatbread in the preheated oven for 10–12 minutes, or until the edges are golden brown and the brie cheese is fully melted. I find keeping a close eye on it around the 10-minute mark prevents overbaking.
  • Remove the flatbread from the oven. Drizzle with balsamic glaze and sprinkle fresh thyme leaves over the top before slicing and serving warm.
