For the base:
- 1 flatbread or pizza crust (store-bought is fine)
For the topping:
- 1 tbsp honey
- 1 tbsp olive oil (extra virgin preferred)
- black pepper (freshly ground)
- 4 oz brie cheese (room temperature)
- 1 tbsp balsamic glaze
- salt
- 1 tbsp fresh thyme leaves
- 1/2 cup cranberries (fresh or dried)
Preheat your oven to 400°F (200°C). Place the flatbread or pizza crust on a baking sheet and set aside to prepare the toppings.
In a small bowl, toss the cranberries with olive oil, a pinch of salt, and freshly ground black pepper until evenly coated. This helps the cranberries roast nicely and adds seasoning.
Evenly spread the seasoned cranberries from Step 2 over the flatbread. Arrange slices of brie cheese on top, then drizzle with honey for added sweetness.
Bake the assembled flatbread in the preheated oven for 10–12 minutes, or until the edges are golden brown and the brie cheese is fully melted. I find keeping a close eye on it around the 10-minute mark prevents overbaking.
Remove the flatbread from the oven. Drizzle with balsamic glaze and sprinkle fresh thyme leaves over the top before slicing and serving warm.
