Ingredients
  

  • 2.5 oz cream cheese, softened
  • 3 ripe avocados
  • 2 1/2 tbsp lime juice
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1 1/2 jalapenos, seeded and finely diced
  • 1/2 cup sharp cheddar cheese, shredded
  • 5 slices bacon, crispy fried and crumbled
  • 1/4 tsp garlic powder
  • 1/8 tsp smoked paprika

Instructions
 

  • Cook the bacon in a skillet over medium-high heat until crispy, about 8-10 minutes, then transfer to a paper towel-lined plate to cool. While the bacon cooks, seed and finely dice the jalapeños—I recommend wearing gloves to protect your hands from the oils. Once the bacon is cool enough to handle, crumble it into small pieces and set aside with the diced jalapeños.
  • Cut the avocados in half lengthwise, remove the pits, and scoop the flesh into a medium mixing bowl. Add the softened cream cheese to the avocados. Using a fork, mash the two together until you reach your desired consistency—I prefer leaving it slightly chunky rather than completely smooth for better texture. The cream cheese will help bind everything together and create a richer, creamier base than guacamole made with avocado alone.
  • Add the lime juice, salt, black pepper, garlic powder, and smoked paprika to the avocado mixture from Step 2. Stir everything together gently but thoroughly, ensuring the seasonings are evenly distributed and the lime juice is fully incorporated to prevent browning. Taste and adjust salt and pepper as needed.
  • Fold in the diced jalapeños from Step 1, shredded cheddar cheese, and crumbled bacon. Mix gently to combine while keeping the texture slightly chunky. The contrast between the creamy guacamole, the sharp cheddar, and crispy bacon makes this dip truly special.
