  • 3 tbsp cocoa powder (sifted to remove lumps before blending)
  • 1/4 tsp salt
  • 1 tsp vanilla

Instructions
 

  • Sift the cocoa powder through a fine-mesh strainer into a small bowl to remove any lumps—this ensures a silky-smooth mousse without grittiness. Measure out the honey, vanilla, and salt into separate small containers for easy access. If your cottage cheese seems watery, strain it through cheesecloth for 5-10 minutes to achieve that thick, creamy texture that makes this mousse so luxurious. I find that using high-quality cottage cheese makes an enormous difference in the final result, so don't skip this step.
  • Add the cottage cheese, sifted cocoa powder from Step 1, honey, vanilla, and salt to a blender in that order. Blend on medium-high speed for 1-2 minutes, stopping to scrape down the sides halfway through, until the mixture is completely smooth and homogeneous with no streaks of cocoa or cottage cheese visible. The texture should be light and airy, similar to a traditional chocolate mousse. I like to blend just until smooth rather than over-blending, which can make the texture too thin.
  • Divide the mousse into serving glasses or bowls. Top each serving with a dollop of whipped cream, fresh fruit of your choice, and chocolate shavings if desired. Serve immediately for the best texture, or refrigerate for up to 24 hours—the mousse will become slightly denser as it chills, which is still delicious.
